Japanese pearls with mango-coconut

Ingredients:

  • 1 cup of sushi rice
  • 1 ½ cups of water
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sugar
  • Pinch of salt
  • 1 ripe mango, diced
  • 1 cup of coconut cream
  • ¼ cup of shredded coconut (optional for garnish)

Instructions:
