King Prawns with Lemongrass, Mango and Green Papaya Salad Recipe

Ingredients:

  • 12 large king prawns, peeled and deveined
  • 2 stalks lemongrass, bruised and sliced
  • 1 green mango, peeled and julienned
  • 1 small green papaya, peeled and julienned
  • 4 shallots, thinly sliced
  • 4 garlic cloves, minced
  • 2 red chillies, thinly sliced
  • 2 tablespoons sugar
  • 2 tablespoons fish sauce
  • 4 tablespoons lime juice
  • 3 tablespoons roasted peanuts, chopped
  • 2 tablespoons coriander leaves, chopped
  • 3 tablespoons vegetable oil
  • Salt to taste

Method:

  1. In a small bowl, mix together 1 stalk of lemongrass (bruised and sliced), shallots, garlic, chillies, sugar, fish sauce, lime juice and salt. Stir the mixture well, until the sugar dissolves. Set it aside.
  2. Heat 3 tablespoons of vegetable oil in a frying pan over medium-high heat and sauté the remaining lemongrass until fragrant. Add the prawns and cook for 2-3 minutes until they turn pink and are cooked through.
  3. Take the pan off the heat and add the prepared sauce to the prawns. Toss gently to coat the prawns in the sauce. Allow it to sit for 10 minutes to infuse the flavours.
  4. In a large bowl, mix together the prepared mango, papaya, coriander leaves and roasted peanuts.
  5. Plate the prawns on four serving plates, and spoon over extra sauce. Serve with the mango and papaya salad and enjoy!
