Ktipiti – Regal Recipe
Ingredients:
- 3 red peppers
- 2 garlic cloves
- 1 cup of feta cheese
- 1/2 cup of Greek yogurt
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of oregano
- 1/2 teaspoon of salt (adjust to taste)
- Crushed red pepper flakes (optional, for spice)
Directions:
- First, roast the red peppers. Preheat your oven to 500°F, then place the peppers on a baking sheet and bake them until they begin to blacken (around 15-20 minutes). Alternatively, you can roast peppers over the fire of a gas stove or grill, but be sure to watch them closely.
- Once the peppers are roasted, let them cool before peeling off the skin and removing the seeds.
- Add the peeled roasted peppers, garlic, feta cheese, Greek yogurt, olive oil, lemon juice, oregano, salt, and red pepper flakes (if using) into a food processor and blend until smooth.
- Taste and adjust any seasoning accordingly.
- Once the dip is to your liking, transfer it to a bowl and serve chilled.
