Ingredients

  • 1 can of sardines in oil, drained and patted dry
  • 2 tablespoons of soy sauce
  • 2 tablespoons of sake
  • 1 tablespoon of mirin
  • 1 tablespoon of sugar
  • 1 clove of garlic, grated
  • 1/2 teaspoon of grated ginger
  • 8 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small saucepan, combine the soy sauce, sake, mirin, sugar, garlic, and ginger. Cook over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens slightly.
  3. Thread 2 sardines onto each bamboo skewer.
  4. Brush the sardines with the soy glaze, reserving some for serving.
  5. Grill the sardines for 2-3 minutes on each side, or until they are lightly charred and heated through.
  6. Brush the sardines with additional glaze and serve immediately.

Serving Suggestions

These sardine yakitoris are delicious on their own, but you can also serve them with a sprinkle of sesame seeds and chopped green onions for an added flavor and crunch. Pair with a glass of chilled white wine or Japanese sake to complete the meal.

Enjoy!
