Lacquered Sardine Yakitoris Recipe

Ingredients
- 1 can of sardines in oil, drained and patted dry
- 2 tablespoons of soy sauce
- 2 tablespoons of sake
- 1 tablespoon of mirin
- 1 tablespoon of sugar
- 1 clove of garlic, grated
- 1/2 teaspoon of grated ginger
- 8 bamboo skewers, soaked in water for 30 minutes
Instructions
- Preheat the grill to medium-high heat.
- In a small saucepan, combine the soy sauce, sake, mirin, sugar, garlic, and ginger. Cook over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens slightly.
- Thread 2 sardines onto each bamboo skewer.
- Brush the sardines with the soy glaze, reserving some for serving.
- Grill the sardines for 2-3 minutes on each side, or until they are lightly charred and heated through.
- Brush the sardines with additional glaze and serve immediately.
