Large Vanilla Millefeuille Recipe

Ingredients:

  • 1 package of puff pastry
  • 1 1/2 cups whole milk
  • 3 egg yolks
  • 1/3 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 1/4 cup confectioner’s sugar

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut into 3 equal rectangles.
  3. Prick the rectangles with a fork and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes until golden brown and crispy. Let them cool down.
  5. In a medium saucepan, heat the milk until it comes to a simmer.
  6. In a large bowl, whisk together the egg yolks, sugar, and cornstarch.
  7. Slowly pour the hot milk into the egg mixture, whisking constantly to combine.
  8. Pour the mixture back into the saucepan and cook over medium heat, whisking constantly until the mixture thickens and comes to a boil.
  9. Remove the pan from the heat and stir in the vanilla extract.
  10. Transfer the mixture to a bowl and cover it with a plastic wrap touching the surface of the mixture (to prevent forming a skin). Let it cool down.
  11. In a large bowl, whisk the heavy cream and confectioner’s sugar until it forms stiff peaks.
  12. Place one of the puff pastry rectangles onto a serving dish and spread half of the custard over it.
  13. Add another puff pastry rectangle on top and spread the remaining custard over it.
  14. Add the third puff pastry rectangle on top and spread the whipped cream over the top and sides of the millefeuille.
  15. Refrigerate the millefeuille for at least 1 hour before serving.

Serving Suggestions:

When serving the millefeuille, dust it with powdered sugar and serve it with fresh berries or fruit compote on the side.
