Lemon Cakes Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup powdered sugar
Instructions:
- Preheat the oven to 350°F (180°C). Grease a 12-cup muffin tin or line with paper liners.
- In a medium bowl, whisk together flour, granulated sugar, salt and baking powder.
- In a large mixing bowl, beat butter until light and creamy. Add eggs, one at a time, beating well after each addition.
- Stir in lemon juice and lemon zest.
- Add the dry ingredients to the wet ingredients and mix just until combined.
- Pour the batter into the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool for a few minutes before removing from the muffin tin and placing onto a wire rack to cool completely.
- Whisk powdered sugar and 1 tablespoon of lemon juice together. Once cakes have cooled, drizzle over the top of each cake.
- Cakes can be stored in an airtight container in the refrigerator for up to 5 days.
