Lemon Cakes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup powdered sugar

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium bowl, whisk together flour, granulated sugar, salt and baking powder.
  3. In a large mixing bowl, beat butter until light and creamy. Add eggs, one at a time, beating well after each addition.
  4. Stir in lemon juice and lemon zest.
  5. Add the dry ingredients to the wet ingredients and mix just until combined.
  6. Pour the batter into the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool for a few minutes before removing from the muffin tin and placing onto a wire rack to cool completely.
  9. Whisk powdered sugar and 1 tablespoon of lemon juice together. Once cakes have cooled, drizzle over the top of each cake.
  10. Cakes can be stored in an airtight container in the refrigerator for up to 5 days.
