Lemon Log: Gourmet Recipe
Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 eggs
- 1/2 cup sugar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/4 cup powdered sugar (for dusting)
Instructions:
- Preheat the oven to 350°F. Grease a 10-inch by 15-inch jelly roll pan and line it with parchment paper.
- In a small bowl, whisk together flour, baking powder and salt. Set aside.
- Using an electric mixer, beat eggs and sugar on high speed until pale, thick and doubled in volume, about 5 minutes. Add lemon juice and lemon zest and beat for another minute.
- Add the dry ingredients to the egg mixture and fold until just combined.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 12-15 minutes or until the top of the cake is golden brown and springs back when touched lightly.
- Remove the cake from the oven and let it cool for a few minutes. Sprinkle powdered sugar onto a clean tea towel and flip the cake onto the towel, so the parchment paper is facing up. Remove the parchment paper.
- Starting at one end, roll up the cake and the tea towel together. Place the rolled-up cake onto a cooling rack and let it cool completely.
- Once cooled, carefully unroll the cake. Spread a layer of lemon curd over the cake, leaving a 1 cm border around the edges.
- Starting at one end, roll up the cake tightly (without the tea towel this time) and place it seam side down onto a serving platter. Dust with powdered sugar.
- Serve chilled.

The light, fluffy sponge cake pairs perfectly with the tangy lemon curd, creating a sweet and tart contrast that will leave you wanting more.
