Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 1/2 cup sugar

Instructions:

  1. Preheat the oven to 350°F. Grease a 10-inch by 15-inch jelly roll pan and line it with parchment paper.

  3. Using an electric mixer, beat eggs and sugar on high speed until pale, thick and doubled in volume, about 5 minutes. Add lemon juice and lemon zest and beat for another minute.
  4. Add the dry ingredients to the egg mixture and fold until just combined.
  5. Pour the batter into the prepared pan and spread it out evenly.
  6. Bake for 12-15 minutes or until the top of the cake is golden brown and springs back when touched lightly.
  7. Remove the cake from the oven and let it cool for a few minutes. Sprinkle powdered sugar onto a clean tea towel and flip the cake onto the towel, so the parchment paper is facing up. Remove the parchment paper.
  8. Starting at one end, roll up the cake and the tea towel together. Place the rolled-up cake onto a cooling rack and let it cool completely.
  9. Once cooled, carefully unroll the cake. Spread a layer of lemon curd over the cake, leaving a 1 cm border around the edges.
  10. Starting at one end, roll up the cake tightly (without the tea towel this time) and place it seam side down onto a serving platter. Dust with powdered sugar.
  11. Serve chilled.
