Linden Bavarois with Peppermint Jus Recipe

Ingredients:

  • 1 cup linden flowers
  • 1 and 1/2 cups heavy cream
  • 1/2 cup sugar
  • 4 egg yolks
  • 2 tsp powdered gelatin
  • 1/3 cup water
  • 1 cup fresh peppermint leaves
  • 1/2 cup water
  • 2 tbsp honey

Directions:

  1. Heat the heavy cream in a saucepan over medium heat until it reaches a simmer.
  2. Add the linden flowers to the saucepan and let steep for 10-15 minutes.
  3. Remove the pan from the heat and strain the cream through a fine-mesh sieve into a bowl to remove the linden flowers. Discard the flowers.
  4. In a separate bowl, whisk together the egg yolks and sugar until well combined.
  5. Add the linden-infused cream to the bowl with the egg yolk mixture and whisk until smooth.
  6. In a small saucepan, sprinkle the gelatin over the water and let sit for a few minutes to soften.
  7. Heat the gelatin mixture over low heat, stirring constantly, until the gelatin is dissolved.
  8. Add the gelatin mixture to the bowl with the cream mixture and whisk until well combined.
  9. Pour the mixture into individual ramekins or a large mold and chill in the refrigerator for at least 4 hours or until set.
  10. While the bavarois is chilling, make the peppermint jus. In a small saucepan, combine the peppermint leaves, water, and honey and bring to a boil. Reduce the heat and let simmer for about 10 minutes.
  11. Remove the pan from the heat and strain the mixture through a fine-mesh sieve to remove the peppermint leaves and any solids. Set the jus aside to cool.
  12. To serve, unmold the bavarois onto individual plates and drizzle with the cooled peppermint jus.
