Linden Bavarois with Peppermint Jus Recipe
Ingredients:
- 1 cup linden flowers
- 1 and 1/2 cups heavy cream
- 1/2 cup sugar
- 4 egg yolks
- 2 tsp powdered gelatin
- 1/3 cup water
- 1 cup fresh peppermint leaves
- 1/2 cup water
- 2 tbsp honey
Directions:

- In a small saucepan, sprinkle the gelatin over the water and let sit for a few minutes to soften.
- Heat the gelatin mixture over low heat, stirring constantly, until the gelatin is dissolved.
- Add the gelatin mixture to the bowl with the cream mixture and whisk until well combined.
- Pour the mixture into individual ramekins or a large mold and chill in the refrigerator for at least 4 hours or until set.
- While the bavarois is chilling, make the peppermint jus. In a small saucepan, combine the peppermint leaves, water, and honey and bring to a boil. Reduce the heat and let simmer for about 10 minutes.
- Remove the pan from the heat and strain the mixture through a fine-mesh sieve to remove the peppermint leaves and any solids. Set the jus aside to cool.
- To serve, unmold the bavarois onto individual plates and drizzle with the cooled peppermint jus.
