Marinated Herring-Style Salmon

Ingredients:

  • 1 lb. salmon fillet, skin-on
  • 2 tbsp. salt
  • 2 tbsp. sugar
  • 1/4 tsp. ground black pepper
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1/2 onion, thinly sliced
  • 1 small carrot, thinly sliced
  • 1/4 cup fresh dill, chopped
  • Slices of rye bread, for serving

Instructions:

  1. Begin by cleaning and de-boning the salmon fillet, leaving the skin on. Rinse the salmon until there are no more visible scales.
  2. Place the salmon in a large shallow dish and sprinkle with salt, sugar, and black pepper. Rub the seasoning into the fish evenly.
  3. In a small bowl, whisk together white vinegar and water. Pour the marinade over the salmon fillet until it is fully covered. Add onion, carrot, and dill to the marinade.
  4. Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 24 hours. Flip the fish a few times during the marinating process to ensure full flavor absorption.
  5. When ready to serve, remove the salmon from the marinade and discard the vegetables and liquid.
