Marinated Mackerel with Fresh Goat Cheese
Ingredients:
- 4 mackerel fillets
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup red wine vinegar
- 1 small red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh goat cheese, crumbled
Instructions:
- In a shallow dish, mix together the olive oil, minced garlic, smoked paprika, salt, and black pepper.
- Add the mackerel fillets to the marinade, turning to coat well. Cover and refrigerate for 2-3 hours.
- In a separate bowl, whisk together the red wine vinegar and sliced red onion. Allow to marinate for at least 30 minutes, stirring occasionally.
- Preheat the grill to medium-high heat. Remove the mackerel fillets from the marinade, shaking off any excess oil. Grill the fillets for about 4 minutes per side until cooked through.
- Arrange the mackerel fillets on a serving platter, then top with the marinated red onions and fresh parsley. Sprinkle fresh goat cheese crumbles over the top.
- Serve immediately.
Verdict:
The marinated mackerel has a smoky, flavorful taste that pairs perfectly with the tangy goat cheese and sweet marinated onions.
