Marinated Mackerel with Fresh Goat Cheese

Ingredients:

  • 4 mackerel fillets
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup red wine vinegar
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh goat cheese, crumbled

Instructions:

  1. In a shallow dish, mix together the olive oil, minced garlic, smoked paprika, salt, and black pepper.
  2. Add the mackerel fillets to the marinade, turning to coat well. Cover and refrigerate for 2-3 hours.
  3. In a separate bowl, whisk together the red wine vinegar and sliced red onion. Allow to marinate for at least 30 minutes, stirring occasionally.
  4. Preheat the grill to medium-high heat. Remove the mackerel fillets from the marinade, shaking off any excess oil. Grill the fillets for about 4 minutes per side until cooked through.
  5. Arrange the mackerel fillets on a serving platter, then top with the marinated red onions and fresh parsley. Sprinkle fresh goat cheese crumbles over the top.
  6. Serve immediately.
