Masfouf (semolina with dried fruits)

Ingredients

  • 1 cup coarse semolina
  • 1 cup dried apricots
  • 1 cup raisins
  • 1/2 cup blanched almonds, toasted and chopped
  • 1/4 cup sugar
  • 1/4 cup butter
  • 1/2 tsp cinnamon
  • 3 cups water

Instructions

  1. In a large skillet, melt butter over medium heat. Add semolina and cinnamon and toast, stirring constantly, for 5-7 minutes until fragrant.
  2. Add the dried apricots, raisins, toasted almonds, and sugar and continue to toast for another 5 minutes.
  3. Pour in the water and stir well. Bring to a boil, then reduce the heat and simmer for 8-10 minutes until the semolina has absorbed all the liquid and is tender. If necessary, add more water to achieve the desired consistency.
  4. Remove from heat and let it cool for a few minutes before serving.
