Mataba or Cassava Leaf Wrap Recipe
Ingredients:
- 1 pound ground beef or lamb
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon allspice
- 1/2 teaspoon ground ginger
- 1/4 cup tomato paste
- 1/4 cup water
- 1 pound cassava leaves
- 3 tablespoons olive oil
Instructions:
- Wash cassava leaves and remove stems. Place leaves in a large pot and cover with water. Bring to a boil and let cook for 10 minutes. Drain and set aside to cool.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until onions are translucent and garlic is fragrant, about 5 minutes.
- Add ground beef or lamb. Use a wooden spoon to break up the meat into small pieces and cook until browned, about 10 minutes.
- Add salt, pepper, paprika, cumin, allspice, and ginger to the skillet. Mix well.
- Add tomato paste and water. Stir until well combined.
- Reduce heat to low. Let simmer for 10 minutes.
- Take a cassava leaf and place a spoonful of the meat mixture on it. Roll the leaf around the meat, tucking in the sides so the meat is fully enclosed. Repeat with remaining leaves and meat.
- Arrange the cassava wraps in a baking dish. Cover with aluminum foil.
- Bake in a preheated oven at 375°F (190°C) for 25 to 30 minutes.
- Remove from oven and let cool for a few minutes before serving.
