Mini Omelettes in Bacon Bacon

Ingredients:

  • 6 strips of bacon
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Grease your muffin tin with cooking spray or line with paper muffin cups.
  3. In a mixing bowl, beat the eggs together and add in the cheese, bell peppers, onions, salt and pepper. Mix thoroughly together.
  4. Cut your bacon strips in half and fit 2 halves in each muffin cup to create a “bacon nest”.
