Mint and Pea Popsicles

Ingredients:

  • 2 cups fresh peas, shelled
  • 1/2 cup fresh mint leaves, chopped
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey
  • 1/2 cup water
  • 1 lime, juiced

Directions:

  1. Steam peas in a pot for 4-5 minutes until tender. Drain and let them cool.
  2. In a blender, combine the peas, mint, yogurt, honey, water, and lime juice.
  3. Blend until smooth and taste for seasoning. If needed, add additional honey, lime juice, or mint leaves to taste.
  4. Pour the mixture into popsicle molds and freeze for at least 4 hours or overnight.
  5. To remove the popsicles from the mold, run it under warm water for a few seconds until it loosens up.
  6. Serve immediately and enjoy!
