Mirabelle Plum Soufflé

Ingredients:

  • Butter, softened (for greasing the ramekins)
  • Sugar, for helping coat the butter in the ramekins
  • 6-8 Mirabelle plums, pitted and mashed
  • 4 egg whites
  • 1/4 cup granulated sugar
  • 1/2 tablespoon lemon juice
  • 1/4 cup all-purpose flour, sifted
  • 1/4 cup whole milk
  • A pinch of salt

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease 4 ramekins with butter and sprinkle sugar over them to coat.
  2. In a bowl, mix plum mash with lemon juice. Set aside.
  3. In separate bowl, beat egg whites with salt until frothy.
  4. Add in sugar (1 tablespoon at a time) and continue to beat until stiff peaks form.
  5. Gently fold in the sifted flour into the egg white mixture until no white streaks remain.
  6. Heat the milk until it is just warm, then fold it with the plum mixture. Fold this mixture into the egg white mixture.
  7. Divide the mixture among the ramekins and smooth over the surface with a butter knife or spatula.
  8. Bake for 15-20 minutes or until it is risen and lightly golden on top.
  9. Serve the soufflés immediately, with a dust of powdered sugar.
