Mirabelle Plum Tart
A delicious family recipe for a sweet and tart dessert.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/3 cup sugar
- 1/4 tsp salt
- 1/2 cup unsalted butter, cubed and chilled
- 1 egg
- 2-3 tbsp cold water
- 2 lbs mirabelle plums, pitted and halved
- 1/4 cup sugar
- 1/4 cup apricot preserves
Instructions
- In a large bowl, whisk together the flour, sugar, and salt. Cut in the butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- In a small bowl, beat the egg and 2 tbsp of cold water together. Add the egg mixture to the flour mixture and stir until the dough comes together and forms a ball. If the dough is too dry, add the remaining 1 tbsp of water.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
- Transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and up the sides of the pan.
- Arrange the mirabelle plum halves in the tart shell, cut-side up, in a circular pattern.
- Sprinkle the 1/4 cup of sugar over the plums.
- Bake the tart for 35-40 minutes, or until the crust is golden brown and crispy.
- In a small saucepan, heat the apricot preserves over medium heat until melted and smooth. Brush the melted preserves over the plums.
- Cool the tart slightly before serving. Serve warm or at room temperature.
