Mirabelle Plum Tartlets with Quinoa-Oat Crumble Recipe
Ingredients for Tartlets:
- 250g butter
- 125g granulated sugar

Method:
- Preheat your oven to 375°F (190°C).
- Begin by making the tartlet dough. In a large mixing bowl, cream together the butter, granulated sugar, and vanilla extract until light and fluffy. Add the flour and salt, and mix until combined.
- Form the dough into a ball, and wrap it in a plastic wrap. Chill in the fridge for 30 minutes.
- Take out the dough and lightly flour your work surface. Roll the dough out to 1/4 inch thickness. Cut the dough into circles that will fit into the tartlet pans, using a cookie cutter or a drinking glass.
- Line the tartlet pans with the dough, pressing the dough into the bottom and sides of each pan. Leave a little excess dough over the top edges of the pans, so that the filling can be placed over the dough.
- Place two halves of Mirabelle plums into each tartlet pan.
- Next, make the crumble. In a separate mixing bowl, combine the cooked quinoa, flour, oats, brown sugar, butter, and salt. Use your fingers to mix the ingredients together until a crumbly, sandy texture is formed.
- Sprinkle the crumble over the top of the Mirabelle plums in each tartlet pan.
- Bake the tartlets in the preheated oven for 25-30 minutes or until the tartlet crusts are golden and the fruit is bubbly. Allow the tartlets to cool in the pan for 5 minutes before removing them, and let them cool completely on a wire rack.
