Scallops, Mango and Avocado Mix

Ingredients:

  • 1 lb scallops
  • 2 ripe avocados
  • 2 ripe mangos
  • 1/4 cup red onion, diced
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Pat scallops dry and season with 1/4 tsp salt and 1/4 tsp black pepper.
  2. Heat a large skillet over medium-high heat and add 1 tbsp olive oil.
  3. Add scallops to the skillet and cook for 2 minutes on each side, until golden brown and cooked through. Set aside.
  4. Chop avocados and mangos into small pieces and place in a large mixing bowl.
  5. Add diced red onion, lime juice, remaining 1 tbsp olive oil, remaining 1/4 tsp salt and black pepper to the mixing bowl and toss until well combined.
  6. Add cooked scallops to the mixing bowl with the mango avocado mixture and toss gently.
  7. Serve immediately.
