Moroccan Beef Stuffed Breads

Ingredients:

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped roasted almonds
  • 1/4 cup raisins
  • 1 cup warm water
  • 2 tsp active dry yeast
  • 1 tsp sugar
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • 1 egg, beaten

Directions:

  1. In a large skillet, cook ground beef over medium heat until browned. Add onion, garlic, cumin, coriander, paprika, cinnamon, ginger, cayenne pepper, salt, and black pepper. Cook until onion is softened, about 5 minutes.
  2. Add parsley, cilantro, almonds, and raisins to the skillet. Cook for another 2 minutes. Remove from heat and allow the mixture to cool.
  3. In a small bowl, combine warm water, yeast, and sugar. Allow it to sit for 5 minutes until frothy.
  4. In a large bowl, mix flour and salt. Add yeast mixture and stir until a dough forms.
  5. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  6. Divide the dough into 12 equal pieces and shape into balls.
  7. Roll each piece of dough into a 6-inch circle and spoon about 1/4 cup of the beef mixture onto the center of the dough circle.
  8. Pinch opposite ends of the dough together, covering the filling and forming a ball.
  9. Place the stuffed breads on a greased baking sheet and allow them to rise for about 30 minutes.
  10. Preheat oven to 375°F.
  11. Brush the top of each stuffed bread with egg wash.
  12. Bake for 20-25 minutes until golden brown.
