Ingredients:

Instructions:

  1. Preheat oven to 375°F.
  2. In a large bowl, whisk together flour and salt. Cut in butter using a pastry cutter or your fingers, until pea-sized crumbs form.
  3. Add ice water, one tablespoon at a time, until the dough comes together and forms a ball. Flatten into a disc shape, cover with plastic wrap, and refrigerate for at least 30 minutes.
  4. In a large skillet over medium-high heat, cook mushrooms until browned and tender, about 8 minutes. Transfer to a bowl and set aside.
  5. In the same skillet, cook shallot and garlic until softened, about 2 minutes. Add wine and cook until evaporated, about 2 more minutes.
  6. Stir in heavy cream and bring to a simmer. Cook until slightly thickened, about 4 minutes. Add thyme, salt, and pepper to taste. Remove from heat and let cool.
  7. Roll out the chilled dough on a floured surface to 1/8-inch thickness. Cut circles to fit into a muffin pan or individual pie dishes.
  8. Fill each crust with mushroom mixture and top with cream mixture.
  9. Brush edges of crust with egg wash and bake for 25-30 minutes or until golden brown and the filling is set.
  10. Serve hot or warm.
