Ingredients:

  • 500g cooked spaghetti
  • 1/2 cup grated parmesan cheese
  • 1/2 cup ricotta cheese
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons finely chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup bread crumbs
  • Vegetable oil for frying

Instructions:

  1. In a large bowl, mix together the cooked spaghetti, parmesan cheese, ricotta cheese, beaten eggs, minced garlic, chopped parsley, salt, and black pepper until well combined.
  2. Form the mixture into balls, about 2-3 tablespoons each, and roll them in bread crumbs until fully coated.
  3. Heat vegetable oil in a high-sided skillet over medium-high heat. Fry the pasta balls in batches until golden brown and crispy, about 3-5 minutes per batch.
  4. Using a slotted spoon, transfer the fritters onto a paper towel-lined plate to drain excess oil.
  5. Let cool for a few minutes and serve hot.
