Strawberry Tiramisu
Ingredients:
- 1 pound strawberries, diced
- 1/2 cup sugar
- 1/4 cup orange juice
- 1 cup heavy cream
- 8 ounces mascarpone cheese
- 1/4 cup powdered sugar
- 1/4 teaspoon vanilla extract
- 24 ladyfingers
- 1 cup brewed espresso or strong coffee
- 1/4 cup Kahlua or other coffee liqueur (optional)
- Cocoa powder for dusting
Instructions:
- In a saucepan, combine the diced strawberries, sugar, and orange juice. Cook over medium heat until the strawberries are soft and the sugar has dissolved, about 10 minutes.
- Puree the strawberry mixture in a blender until smooth. Let cool to room temperature.
- In a bowl, whip the heavy cream until stiff peaks form. In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold the whipped cream into the mascarpone mixture.
- Combine the brewed espresso or strong coffee and Kahlua in a shallow dish. Dip each ladyfinger into the coffee mixture, soaking them for a few seconds until they are moist but not falling apart.
- Arrange half of the ladyfingers in a single layer in the bottom of a 9×13 inch dish. Spread half of the mascarpone mixture on top of the ladyfingers. Spread half of the strawberry puree over the mascarpone mixture.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and strawberry puree.
- Cover and refrigerate for at least 4 hours, or overnight if possible.
- Before serving, dust the top with cocoa powder.
