Orange-Carrot Popsicles Recipe
Ingredients:
- 3 medium-sized carrots, peeled and chopped
- 2 cups fresh orange juice, strained
- 1/4 cup honey
- 1 teaspoon vanilla extract
Directions:
- In a medium saucepan, bring the chopped carrots and 1 cup of water to a boil.
- Cover the saucepan and let simmer until the carrots are soft, about 12-15 minutes.
- Let the cooked carrots cool slightly, then transfer them to a blender.
- Add the fresh orange juice, honey, and vanilla extract to the blender and blend until the mixture is smooth.
- Divide the mixture into popsicle molds and freeze until solid, about 4-6 hours.
- To remove the popsicles from the molds, run the molds under hot water for a few seconds and then gently pull the popsicles out.
