Orange-Carrot Popsicles Recipe

Ingredients:

  • 3 medium-sized carrots, peeled and chopped
  • 2 cups fresh orange juice, strained
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Directions:

  1. In a medium saucepan, bring the chopped carrots and 1 cup of water to a boil.
  2. Cover the saucepan and let simmer until the carrots are soft, about 12-15 minutes.
  3. Let the cooked carrots cool slightly, then transfer them to a blender.
  4. Add the fresh orange juice, honey, and vanilla extract to the blender and blend until the mixture is smooth.
  5. Divide the mixture into popsicle molds and freeze until solid, about 4-6 hours.
  6. To remove the popsicles from the molds, run the molds under hot water for a few seconds and then gently pull the popsicles out.
  7. Serve and enjoy!
