Orangettes: Chocolate Recipe
Ingredients:
- 2 medium-sized oranges
- 1 cup of sugar
- 1/2 cup of water
- 8 ounces of dark chocolate
Instructions:
- Using a knife, slice the top and bottom off each orange to reveal the flesh of the fruit.
- With the flat surface of the orange on the cutting board, make a series of slender cuts through the rind, from top to bottom, removing wide strips of rind until the majority of the white pith is exposed.
- Next, cut the strips of rind into thin strips — around 1/8 inch wide. Set these aside and discard any excess pith or pulp.
- In a saucepan, combine the sugar and water, and bring to a boil over medium-high heat. Once boiling, add the orange rind strips and let simmer for about 10 minutes, or until the rind is softened.
- Using a slotted spoon, transfer the cooked orange rind to a wire rack and let dry for about an hour, or until the rind is no longer wet but still pliable. Reserve the remaining syrup.
- Melt the dark chocolate in a double boiler or a heatproof bowl set over a pan of simmering water. Once melted, remove from heat and let it cool slightly.
- Dip each orange strip halfway into the chocolate and place on a parchment lined sheet. Let cool in the fridge or at room temperature until the chocolate is set.
- Drizzle some of the reserved syrup over the Orangettes before serving.
