Orecchiette with Stilton, Pears, and Walnuts

Ingredients:

  • 1 pound orecchiette pasta
  • 1/2 pound Stilton cheese, crumbled
  • 2 ripe pears, cored and thinly sliced
  • 1 cup walnuts, toasted and coarsely chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Directions:

  1. Bring a large pot of salted water to a boil. Add the orecchiette and cook until al dente, following box instructions. Drain, reserving 1 cup of the pasta water.
  2. In a large bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper, to taste.
  3. Add the cooked pasta to the bowl with the dressing. Toss to coat the pasta with the dressing, adding reserved pasta water to loosen the sauce as needed.
  4. Add the crumbled Stilton cheese to the pasta and toss gently to combine.
  5. Divide the pasta among serving plates. Top with sliced pears and toasted walnuts.
