Pancetta and Parmesan Squid Spaghetti Recipe
Ingredients:
- 500g spaghetti
- 200g pancetta, diced
- 2 tablespoons olive oil
- 500g squid tubes, cleaned and sliced into rings
- 6 cloves garlic, minced
- 1 red chili, sliced (optional)
- 1 cup grated parmesan cheese
- 1/2 cup white wine
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh parsley
Method:
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions. Reserve 1/2 cup of pasta water and drain the spaghetti.
- In a large pan, heat olive oil over medium-high heat. Add pancetta and fry until crisp and golden brown. Remove pancetta from the pan and set aside.
- Add squid to the same pan and cook for 2-3 minutes or until it starts to turn golden brown. Add garlic and chili (if using) and cook for a further minute.
- Remove the pan from heat and add cooked spaghetti, reserved pancetta, and white wine. Toss everything well and let the wine cook for 1-2 minutes.
- Add grated parmesan cheese and a little reserved pasta water (if needed) to make a creamy sauce. Season with salt and freshly ground black pepper to taste.
- Garnish the spaghetti with fresh parsley and serve immediately.
