Panelle (chickpea flour fritters)

Panelle Recipe

Ingredients:

  • 1 cup chickpea flour
  • 1 1/2 cups water
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cloves garlic, finely minced
  • 1/4 cup chopped fresh parsley
  • Vegetable oil for frying

Instructions:

  1. In a medium saucepan, whisk together the chickpea flour, water, olive oil, salt, and black pepper until no lumps remain.
  2. Stir in the minced garlic and chopped parsley.
  3. Cook the mixture over medium heat, stirring constantly, until it thickens and pulls away from the sides of the pan forming a very thick, dry dough.
  4. Transfer the dough to a greased square or rectangular baking dish and smooth it out into an even layer, about 1/2 inch thick.
  5. Let the dough cool, then cut it into small rectangular or diamond-shaped pieces.
  6. Heat vegetable oil in a large, deep pan or Dutch oven until it reaches 375°F (190°C).
  7. Fry the panelle in batches, flipping them occasionally, until they are crisp and golden brown on both sides.
  8. Drain on paper towels and serve immediately, plain or with your favorite sauce.
