Papaya Cheesecake Recipe

Ingredients

  • 1 cup digestive biscuit crumbs
  • 2 tbsp sugar
  • 1/2 cup unsalted butter, melted
  • 3 packs cream cheese, softened
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups papaya puree

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round springform pan.
  2. In a bowl, mix the biscuit crumbs, 2 tbsp sugar, and melted butter until well combined. Press the mixture onto the bottom of the prepared pan.
  3. In another bowl, beat the cream cheese and 1 1/4 cups sugar until smooth.
  4. Add in the eggs, one at a time, mixing well after each addition.
  5. Mix in the vanilla extract and papaya puree until well combined.
  6. Pour the mixture into the prepared crust.
  7. Bake the cheesecake for 50-60 minutes, or until set but slightly jiggly in the center.
  8. Allow the cheesecake to cool completely to room temperature.
  9. Refrigerate the cheesecake for at least 3 hours, or overnight, before serving.
