Papaya Cheesecake Recipe
Ingredients
- 1 cup digestive biscuit crumbs
- 2 tbsp sugar
- 1/2 cup unsalted butter, melted
- 3 packs cream cheese, softened
- 1 1/4 cups sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 cups papaya puree
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round springform pan.
- In a bowl, mix the biscuit crumbs, 2 tbsp sugar, and melted butter until well combined. Press the mixture onto the bottom of the prepared pan.
- In another bowl, beat the cream cheese and 1 1/4 cups sugar until smooth.
- Add in the eggs, one at a time, mixing well after each addition.
- Mix in the vanilla extract and papaya puree until well combined.
- Pour the mixture into the prepared crust.
- Bake the cheesecake for 50-60 minutes, or until set but slightly jiggly in the center.
- Allow the cheesecake to cool completely to room temperature.
- Refrigerate the cheesecake for at least 3 hours, or overnight, before serving.
