Pasta Alla Genovese is a classic Italian dish from Genoa. It’s a flavorful pasta dish made with a slow-cooked onion and beef sauce.

Ingredients:

  • 1 lb. dried pasta (penne or rigatoni)
  • 1 lb. beef chuck roast
  • 4 onions, thinly sliced
  • 4 garlic cloves, minced
  • 1/2 cup olive oil
  • 1/2 cup white wine
  • 1/2 cup beef broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. In a large dutch oven or pot, heat the olive oil over medium heat. Add the sliced onions and cook for about 30 minutes, stirring occasionally, until the onions are caramelized and soft.
  2. Add the minced garlic and cook for an additional minute.
  3. Add the beef chuck roast and sear on all sides until browned.
  4. Add the white wine and scrape up any browned bits from the bottom of the pot.
  5. Add the beef broth and bring the sauce to a simmer.
  6. Cover the pot and reduce the heat to low. Let the sauce simmer for 2-3 hours, stirring occasionally, until the beef is falling apart tender.
  7. Once the sauce is done, cook the pasta according to package instructions.
  8. Reserve 1 cup of the pasta water and drain the pasta.
  9. Add the drained pasta to the pot with the sauce and toss to combine. If the sauce is too thick, add some of the reserved pasta water to thin it out to your desired consistency.
  10. Season with salt and pepper to taste.
  11. Serve hot, topped with grated Parmesan cheese.
