Ingredients
- 8 spring roll wrappers
- 2 ripe pears, peeled and chopped
- 1/2 cup chopped walnuts
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 tbsp cornstarch
- 1/4 cup water
- Vegetable oil, for frying
Instructions
- In a medium bowl, combine pears, walnuts, brown sugar, and cinnamon. Toss to coat evenly.
- In a small bowl, whisk together cornstarch and water until smooth.
- Place a wrapper on a flat surface, with one corner facing you. Spoon 2-3 tablespoons of the filling onto the wrapper, spreading it out in a horizontal line. Fold the corner closest to you up and over the filling, then fold in the sides. Roll the wrapper away from you, tucking in the filling as you go. Use a bit of the cornstarch mixture to seal the edge of the wrapper. Repeat with remaining wrappers and filling.
- In a large, deep skillet or pot, heat vegetable oil over medium-high heat until hot. Fry spring rolls in batches until golden brown and crisp, about 3-4 minutes. Drain on paper towels.
- Serve spring rolls hot, garnished with additional chopped walnuts if desired.
Bon Appetit!
