Perfect Egg, Ham and Straw Potatoes Recipe

Ingredients:

  • 4 large eggs
  • 4 slices of ham, thinly sliced
  • 2 medium-sized potatoes, cut into thin slices (straw potatoes)
  • 1/2 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of butter
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions:

  1. In a large nonstick skillet over medium heat, melt one tablespoon of butter.
  2. Add the onion and garlic to the skillet and cook for 3 minutes or until they become softened and fragrant.
  3. Next, add in the thinly sliced potatoes and season them with half of the salt and black pepper. Make sure to stir occasionally until the potatoes are cooked through and golden brown. This should take about 10-12 minutes.
  4. Melt the remaining tablespoon of butter in a separate non-stick skillet over medium heat.
  5. Add the ham slices to the skillet and cook until they are crispy and caramelized. This should take about 5-7 minutes. When finished, transfer the slices to a plate and set aside temporarily.
  6. Crack the eggs into the ham pan and gently fry them to your desired firmness. Usually, this takes about 3-4 minutes for sun-side eggs.
  7. Divide the straw potatoes onto four plates, then top each serving with an egg and ham, and season with the other half of the salt and black pepper. Serve hot.
