Piquillo and Pine Nut Puffs

Ingredients:

  • 1 sheet puff pastry, thawed
  • 100g cream cheese
  • 50g piquillo peppers, finely chopped
  • 30g pine nuts, toasted
  • 1 egg, beaten

Instructions:

  1. Preheat oven to 200°C.
  2. Spread out the puff pastry sheet on a floured surface, and cut it into 12 equal squares.
  3. In a bowl, mix together cream cheese, chopped piquillo peppers and toasted pine nuts.
  4. Place a spoonful of the mixture in the center of each square.
  5. Brush the edges of each square with beaten egg, and fold them over to form a triangle. Use a fork to press the edges together.
  6. Place the puffs on a lined baking tray, brush the tops with beaten egg, and bake for 15-20 minutes, or until the pastry is golden brown and puffed up.
  7. Remove from the oven and let cool for 5 minutes before serving.
