Plum Cake Recipe
Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 4-5 ripe plums, pitted and sliced
Instructions:
- Preheat the oven to 350°F (180°C). Grease a 9-inch cake pan and set aside.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Stir in the vanilla extract.
- Gradually fold in the flour mixture alternately with the milk, starting and ending with the flour mixture.
- Pour the batter into the prepared pan and smooth the top.
- Arrange the sliced plums on top of the batter, pressing them down slightly.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve the plum cake with whipped cream or vanilla ice cream.
