Poppy Seed Tart

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 6 tablespoons unsalted butter, cut into small pieces
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1 tablespoon water
  • 1 cup milk
  • 2/3 cup poppy seeds
  • 1/2 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter, melted
  • 2 egg yolks, beaten
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. Make the crust by combining the flour, butter, sugar, and salt in a large bowl. Mix until the mixture resembles coarse crumbs. Add the egg yolk and water and mix until the dough comes together.
  3. Place the dough on a lightly floured surface and roll out into a 9-inch (23cm) circle. Transfer the dough to a 9-inch (23cm) tart pan and press into the bottom and sides of the pan. Trim off any excess dough.
  4. In a medium saucepan, heat the milk and poppy seeds over medium heat until the mixture comes to a simmer.
  5. In a separate bowl, whisk together the sugar and flour. Slowly whisk in the melted butter, egg yolks, and vanilla extract.
  6. Slowly pour the hot milk mixture into the egg mixture, whisking constantly, until well combined.
  7. Pour the filling into the prepared crust and bake for 45-50 minutes, or until set.
  8. Let the tart cool completely before cutting and serving.
