Poppy Seed Tart
Ingredients:
- 1 1/2 cups all-purpose flour
- 6 tablespoons unsalted butter, cut into small pieces
- 1/3 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1 tablespoon water
- 1 cup milk
- 2/3 cup poppy seeds
- 1/2 cup granulated sugar

- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F (180°C).
- Make the crust by combining the flour, butter, sugar, and salt in a large bowl. Mix until the mixture resembles coarse crumbs. Add the egg yolk and water and mix until the dough comes together.
- Place the dough on a lightly floured surface and roll out into a 9-inch (23cm) circle. Transfer the dough to a 9-inch (23cm) tart pan and press into the bottom and sides of the pan. Trim off any excess dough.
- In a medium saucepan, heat the milk and poppy seeds over medium heat until the mixture comes to a simmer.
- In a separate bowl, whisk together the sugar and flour. Slowly whisk in the melted butter, egg yolks, and vanilla extract.
- Slowly pour the hot milk mixture into the egg mixture, whisking constantly, until well combined.
- Pour the filling into the prepared crust and bake for 45-50 minutes, or until set.
- Let the tart cool completely before cutting and serving.
