Potato Cakes with Fried Foie Gras Recipe

Ingredients:

  • 2 large potatoes, peeled and diced into small cubes
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tbsp butter
  • 1 egg, lightly beaten
  • 1/2 cup flour
  • 1/4 cup milk
  • 2 tbsp olive oil
  • 8 oz. foie gras
  • Salt and pepper to taste

Directions:

  1. Place diced potatoes in a pot of boiling salted water until tender. Drain and mash the potatoes until smooth.
  2. In a frying pan, sauté chopped onion and minced garlic with butter until onions are translucent. Add sautéed onion to the mashed potatoes.
  3. Add the lightly beaten egg, flour, milk, salt, and pepper to the mashed potatoes. Mix well until all ingredients are fully incorporated.
  4. In a frying pan, heat olive oil over medium heat. Use your hands to shape the mashed potato mixture into small, flat cakes.
  5. Fry the potato cakes in the hot oil until golden brown on both sides. Place on a plate and keep warm.
  6. Cut the foie gras into slices and season with salt and pepper.
  7. In the same frying pan used for the potato cakes, fry the foie gras slices for 30 seconds on each side until nicely browned.
  8. Place the fried foie gras slices on top of the potato cakes.
