Potato Soup Recipe

Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken stock
  • 4 cups peeled and diced potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream

Instructions

  1. Melt the butter in a large pot over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
  2. Add the chicken stock, potatoes, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.
  3. Remove the pot from heat and use an immersion blender to purée the soup until smooth.
  4. Stir in the heavy cream and return the pot to low heat. Cook for an additional 5 minutes.
  5. Serve hot and enjoy!
