Puff Pastries with Red Fruits

Ingredients:

  • 1 package of frozen puff pastry, thawed
  • 1 cup chopped strawberries
  • 1 cup raspberries
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 egg, beaten
  • 1 tablespoon granulated sugar

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine chopped strawberries, raspberries, brown sugar, and cornstarch, and mix until well combined.
  3. Unroll puff pastry and cut into 6 rectangles.
  4. Spoon the berry mixture evenly onto 3 of the rectangles, leaving about 1/2 inch border around the edges.
  5. Top each pastry rectangle with another pastry rectangle and press the edges together with a fork to crimp.
  6. Brush the tops with the beaten egg and sprinkle with granulated sugar.
  7. Bake for 18-20 minutes, until the pastry is golden brown.
  8. Remove from the oven and let cool for a few minutes before serving.

Serving Suggestions:

Serve these puff pastries with red fruits warm with a scoop of vanilla ice cream or a dollop of whipped cream on top for an extra indulgent treat. They make a great addition to any brunch or dessert table. Enjoy!
