Creamy Pumpkin Soup Recipe

Ingredients:

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 medium-sized pumpkin, peeled and chopped
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and sauté until the onions are translucent and fragrant.
  3. Add the chopped pumpkin and stir well.
  4. Add the vegetable broth and seasonings and bring to a boil, then reduce heat and allow to simmer for 25-30 minutes or until the pumpkin is tender.
  5. Remove from heat and blend the soup until smooth and creamy using an immersion blender or transfer it to a blender in batches.
  6. Add the heavy cream and stir well.
  7. Return the soup to the pot and heat over low heat for an additional 5 minutes, stirring occasionally.
  8. Season with additional salt and pepper if needed.
