Quiche with Roasted Pears, Endives and Goat Cheese Recipe

Ingredients:

  • 1 pre-made pie crust
  • 2 ripe pears, peeled and thinly sliced
  • 2 endives, thinly sliced
  • 4 oz crumbled goat cheese
  • 4 eggs
  • 1 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 375°F / 190°C.
  2. Place the pie crust in a 9-inch pie dish and crimp the edges. Set aside.
  3. In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper. Set aside.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the sliced pears and endives to the skillet and cook, stirring occasionally, until they are soft and slightly browned, about 5-7 minutes. Remove from heat.
  6. Arrange the cooked pears and endives in the pie crust.
  7. Sprinkle the crumbled goat cheese over the top of the pears and endives.
  8. Pour the egg mixture over the top of the cheese, pears, and endives.
  9. Place the quiche in the oven and bake for 35-40 minutes or until the filling is set and the top is golden brown.
  10. Remove from the oven and allow the quiche to cool for about 10 minutes before serving.
