Rabbit Terrine with Pistachio and Asparagus Recipe
Ingredients:
- 1 rabbit, deboned and cleaned
- 1 bunch of asparagus
- 1 cup of pistachios
- 1 onion, chopped
- 3 cloves of garlic, chopped
- 1 tbsp of butter
- 1 tbsp of olive oil
- 2 tbsp of white wine
- 1 tbsp of thyme
- 1 tsp of salt
- 1 tsp of black pepper
Instructions:
- Preheat the oven to 350°F (180°C).
- Cut the asparagus spears into 2-inch pieces, setting aside the tips. Blanch the asparagus in boiling water for 2 minutes, then shock them in cold water. Drain and set the asparagus aside.
- In a frying pan, heat the butter and olive oil over medium heat. Sauté the onions and garlic for 2–3 minutes or until softened. Add the rabbit meat and stir until browned.
- Stir in the white wine and thyme. Season with the salt and black pepper. Allow the mixture to simmer for 2–3 minutes, stirring occasionally.
- Remove the rabbit meat from the pan and place it in a food processor. Pulse the meat until it becomes a fine paste. Mix the rabbit meat with the blanched asparagus and pistachios.
- Line a terrine mold with plastic wrap. Pour the rabbit meat mixture into the mold, pressing it down gently to pack it tightly.
- Cover the top with more plastic wrap. Bake for 45 minutes. Remove the terrine from the oven and let it rest for 10 minutes.
- Remove the plastic wrap and invert the terrine onto a serving dish. Serve with some freshly baked bread and a side salad.
