Raspberry Financiers
Ingredients:
- 1/2 cup unsalted butter
- 1 cup almond flour
- 1 1/4 cups powdered sugar
- 1/2 cup all-purpose flour
- 5 egg whites
- 1 tsp vanilla extract
- 1/2 cup fresh raspberries
Instructions:
- Preheat the oven to 375°F/190°C.
- Melt the butter in a small saucepan over medium heat for a few minutes until it turns golden brown in color. Remove from heat and cool for 5 minutes.
- In a large mixing bowl, whisk together almond flour, powdered sugar, and all-purpose flour.
- Add egg whites and whisk until the batter is smooth.
- Add browned butter and vanilla extract and whisk again.
- Fill the financier molds with the batter, about 3/4 way full.
- Top each mold with 2-3 raspberries.
- Bake for 20-25 minutes or until golden brown in color.
- Remove from oven and let them cool for 10 minutes before transferring them to a wire rack to cool completely.
- Serve with whipped cream and extra raspberries, if desired.
