Raspberry Financiers

Ingredients:

  • 1/2 cup unsalted butter
  • 1 cup almond flour
  • 1 1/4 cups powdered sugar
  • 1/2 cup all-purpose flour
  • 5 egg whites
  • 1 tsp vanilla extract
  • 1/2 cup fresh raspberries

Instructions:

  1. Preheat the oven to 375°F/190°C.
  2. Melt the butter in a small saucepan over medium heat for a few minutes until it turns golden brown in color. Remove from heat and cool for 5 minutes.
  3. In a large mixing bowl, whisk together almond flour, powdered sugar, and all-purpose flour.
  4. Add egg whites and whisk until the batter is smooth.
  5. Add browned butter and vanilla extract and whisk again.
  6. Fill the financier molds with the batter, about 3/4 way full.
  7. Top each mold with 2-3 raspberries.
  8. Bake for 20-25 minutes or until golden brown in color.
  9. Remove from oven and let them cool for 10 minutes before transferring them to a wire rack to cool completely.
  10. Serve with whipped cream and extra raspberries, if desired.
