Rustic Plum Tart – Régal

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 3-4 tablespoons ice water
  • 8-10 ripe plums, halved and pitted
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar, for sprinkling on top

Instructions:

  1. In a large bowl, mix flour, sugar, and salt together. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until dough forms a ball. Divide dough in half, and wrap each half in plastic wrap. Chill for at least 30 minutes.
  2. Preheat oven to 400°F (200°C).
  3. Roll one half of dough into a 12-inch circle on a floured surface. Transfer to a baking sheet lined with parchment paper.
  4. In a medium bowl, mix together sugar, flour, cinnamon, and salt. Arrange plums on top of the dough, leaving a 2-inch border around the edge. Sprinkle the sugar mixture over the plums, then drizzle with melted butter.
  5. Roll out the second half of dough into a 12-inch circle. Carefully place it over the plums and trim the edges to fit. Pinch the edges of the crusts together to seal. Sprinkle with granulated sugar.
  6. Bake in preheated oven for 35-40 minutes, until crust is golden brown and filling is bubbling. Let cool for 10 minutes before serving.

Serving suggestion:
