Salad of Raw Vegetables and Fresh Goat Cheese

Ingredients:

  • 2 cups mixed greens
  • 1 carrot, julienned
  • 1 zucchini, julienned
  • 1 yellow squash, julienned
  • ½ red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 4 oz fresh goat cheese
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp balsamic vinegar
  • Salt and black pepper to taste

Instructions:

  1. In a large mixing bowl, combine the mixed greens, carrot, zucchini, yellow squash, red onion, red bell pepper, and cherry tomatoes.
