Salmon Meringue Blinis Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon sugar
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon unsalted butter, melted
  • 4 oz smoked salmon
  • 1 tablespoon olive oil
  • 2 egg whites
  • 1/4 teaspoon cream of tartar

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick pan over medium-high heat. Spoon tablespoonfuls of batter onto the pan.
  5. Cook for 1-2 minutes per side, until golden brown. Repeat with the remaining batter.
  6. Heat olive oil in a pan, add salmon and cook for about 1 minute on both sides until it is lightly crisp.
  7. In a separate, clean bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
  8. Spoon the egg whites into a piping bag and pipe a small amount onto each blini.
  9. Place salmon on top of the egg whites and pipe another dollop of egg whites on top of salmon.
  10. Broil under high heat for 1-2 minutes, until the egg whites are lightly golden and crisp.
