Semi-cooked Chocolate: The Gourmet Recipe

Ingredients:

  • 6 oz. high-quality dark chocolate, chopped
  • 1/2 cup heavy cream
  • 2 egg yolks
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

  1. Melt the chocolate in a double boiler over medium heat, stirring occasionally until smooth.
  2. In a separate saucepan, heat the cream until it begins to simmer.

  6. Pour the mixture into 6 ramekins or small cups and chill for at least 2 hours or until set.
