Sheep’s Bush Tartlets Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, chilled and cut into small cubes
- 3 tablespoons cold water
- 1/2 cup ground sheep’s bush (dried)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup brown sugar
- 1/4 cup honey
- 2 tablespoons unsalted butter
- 2 tablespoons heavy cream
- 1 egg yolk
Instructions:
- In a large bowl, mix together the flour and chilled butter with a fork or pastry blender until the mixture resembles coarse crumbs.
- Add the cold water and continue mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C) and lightly grease a muffin tin.
- In a separate bowl, mix together the ground sheep’s bush, cinnamon, nutmeg, brown sugar, honey, butter, heavy cream and egg yolk until well combined.
- On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness. Cut out circles with a biscuit cutter or glass and press them into the muffin tin to form tart crusts.
- Spoon the sheep’s bush mixture into the tart crusts, filling them about 3/4 full.
- Bake for 20-25 minutes, until the tart crusts are golden brown and the filling is set.
- Remove from the oven and let cool for a few minutes before removing the tartlets from the muffin tin.
