Shortbread Tartlets with Crème Brûlée
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup salted butter, softened
- 3 egg yolks
- 1/2 cup heavy cream
- 1/4 cup granulated sugar (for the crème brûlée topping)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and butter and mix well until the mixture comes together and forms a smooth dough.
- Divide the dough into 6 pieces and press them into greased tartlet molds. Use a fork to poke several small holes in the bottom of the crust, then bake for 10-12 minutes, or until golden brown.
- Remove the tartlets from the oven and let them cool down for a few minutes.
- In another mixing bowl, whisk together the egg yolks and heavy cream. Pour the mixture into the cooled tartlets and bake them for another 20-25 minutes, or until the filling is set.
- Remove the tartlets from the oven and let them cool down for a few minutes.
- Sprinkle the remaining granulated sugar over the top of each tartlet, and use a kitchen torch to caramelize the sugar until lightly browned.
- Let the tartlets cool down before serving. Serve at room temperature.
