Sicilian Watermelon Tart Recipe

Ingredients

  • 1 pre-made 9-inch pastry crust
  • 4 cups of seedless watermelon, chopped into small pieces
  • 1 cup of mascarpone cheese
  • 1/2 cup of heavy cream
  • 1/4 cup of honey
  • 1 tablespoon of freshly squeezed lemon juice
  • 1/4 cup of slivered almonds
  • Mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lay the pastry crust in a 9-inch tart pan. Prick the bottom of the crust with a fork and bake for about 12-15 minutes or until lightly golden.
  3. In a medium bowl, whisk together the mascarpone cheese, heavy cream, honey, and lemon juice until smooth.
  4. Spread the mixture evenly over the cooled pastry crust.
  5. Spread the chopped watermelon over the top of the mascarpone mixture.
  6. Sprinkle the slivered almonds on top of the watermelon.
  7. Bake the tart for an additional 10-15 minutes or until the almonds are toasted and the fruit is slightly caramelized.
  8. Let the tart cool for at least 20 minutes in the pan before removing it and placing it on a serving platter. Garnish with fresh mint leaves and serve.
