Small Candied Fruit Cakes Recipe

Ingredients:

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped candied fruit (mix of orange, lemon and cherries)
  • 1/4 cup milk

Instructions:

  1. Preheat oven to 350°F.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time and beat well after each addition.
  4. Stir in vanilla extract.
  5. In a separate bowl, mix together flour, baking powder and salt.
  6. Add flour mixture to the butter mixture in three parts alternating with milk.
  7. Stir in the chopped candied fruit until evenly distributed.
  8. Grease a mini muffin tin and spoon the mixture into each well.
  9. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the cakes to cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely.
