Soft Cardamom Caramels with Dark Chocolate Glaze Recipe

Ingredients:

  • 1 cup heavy cream
  • 1/4 cup unsalted butter, cut into pieces
  • 1/4 tsp ground cardamom
  • 1/4 tsp salt
  • 1 1/4 cup granulated sugar
  • 1/3 cup light corn syrup
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 4 oz dark chocolate, chopped

Instructions:

  1. Butter an 8-inch square baking dish and line it with parchment paper, leaving an overhang on two sides.
  2. In a medium saucepan, combine the cream, butter, cardamom, and salt. Heat over medium heat until the butter is melted and the cream is hot but not boiling. Remove from heat and set aside.
  3. In a large saucepan, combine the sugar, corn syrup, and water. Heat over medium heat, stirring until the sugar has dissolved. Stop stirring and continue to cook until the mixture turns a deep amber color, about 10 minutes.
  4. Remove the pan from the heat and carefully pour in the cream mixture. It will bubble up! Stir until well combined and return the pan to medium heat. Cook, stirring frequently, until the mixture reaches 248°F on a candy thermometer.
  5. Remove from heat and stir in the vanilla. Pour the mixture into the prepared dish and let cool at room temperature for 1 hour.
  6. Lift the caramel out of the dish using the parchment overhang and place on a cutting board. Cut into small squares.
  7. In a small saucepan, melt the chocolate over low heat, stirring constantly. Dip each caramel into the chocolate, using a fork to coat it completely. Place on a parchment-lined baking sheet to set.
  8. Store the caramels in an airtight container in the refrigerator for up to 2 weeks.
